Chef Einat Admony’s pink, windowed kitchen serves New Mediterranean food, a cuisine which she says chose her – it represents “her past, her roots, her comfort zone”. Born and raised in Israel, Chef Admony, who has always cooked, decided after completing her military service and doing some traveling, that cooking was the one thing she could do for the rest of her life. She attended culinary school, opened the popular falafel place Taim in the West Village, followed by this acclaimed restaurant in 2010. The dish Admony feels most represents her cooking is the Eggplant Bruschetta because it has “layer upon layer of flavors”.
