Even though this is the second week in a row that a stoveless kitchen is featured, Pure Food’s kitchen could not be more different than Fette Sau’s in that it serves exclusively raw vegan food. Instead of stoves and ovens, dehydraters (the black boxes seen throughout both the main and the pastry kitchen) are utilized to warm the food, and at times to fully dehydrate such items as crackers and falafel. The maximum temperature of 118 degrees used is believed to help maintain nutrients that may be lost during traditional cooking processes. Chef Nikki King Bennett who is herself a vegetarian, did not learn to make raw food until after she had graduated from the Natural Gourmet Institute, which teaches mostly meat-free cookery. Thanks Nicole. I would recommend the lasagna, which is their signature dish, and the deserts are incredible – I had the tiramisu and the lemon cheesecake… next time I plan on trying the tamales.
The tamales are amazing and so is the oreo icecream. Love this place.
